Corn pancakes




We love corn pancakes here. I used to get the Jiffy box of corn muffin mix and cook those up as pancakes. The Jiffy mix is very sweet though and I have not looked at whether it's ok on the elimination diet Paulo's on. So last Sunday, after a full week of being pestered for corn pancakes by my 6 year old, I made these instead. They were a hit! Quick and easy to make and very light, I will definitely make them again.


Corn Pancakes (gluten free, dairy free, egg free)

1 cup cornmeal
1/2 cup GF flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cup plain rice milk
2 tablespoons honey
1 tablespoon oil

Combine the dry ingredients in a large bowl.  Stir in the milk and oil.  Mix well and cook as usual.

  1. So if I use regular flour and regular milk, will it still be ok?

  2. Yeah, you could try adding whole wheat flour or whole wheat pastry flour instead of the GF flour. You might need to play around with the milk, maybe add a little extra until it gets the right consistency. Wheat flours seem denser to me than GF.

  3. Oh and these are really, really good warm with rasberry jam on top. The boys all prefer theirs with honey, but I love the jam!

  4. I'm SO happy I found your blog! First of all, I saw Oregon in your profile somewhere and was like, AGH! VEGAN CENTRAL. Then as I kept reading your post I saw your raw food challenge one. That is an excellent goal!! I recommend making sure you get grains in your cooked section so that you feel satiated, not a lot, but something along the lines of red quina, regular quinoa, red rice, or wild rice, and buckwheat (delicious when made right, you can have it raw, it's better that way, just soak them).

  5. thanks for the ideas Amy, I have not done much soaking/sprouting of grains, but am quite curious about it. The challenge has been very positive so far and motivated me to sign on to the month long Vegetarian committment for Veg awareness month.

  6. I made these last night using organic corn flour in place of the corn meal. I think the CF is just the same thing just more finely ground?? Anywho - they were a huge hit w/ the Bees but I had a terrible time flipping them as they stuck to my pan. Any tips? It could just be my old ass griddle.

  7. Not sure about the corn flour vs corn meal, I would imagine it would give a similar taste, the corn meal gives a little more crunchy texture. Do you use cooking spray on your ancient griddle? Maybe try letting them sit longer on the first side, I find when I get anxious to flip and flip too soon they're a mess. I've had some GF pancake recipes that just do not flip well though, this one did good for me. I made these today for breakfast but cooked them in my waffle maker-Paulo was a happy boy!
