Pesto quinoa salad
Salad:
Quinoa, cooked and cooled
Grape tomatoes, halved
Cucumber, halved, seeds removed and finely diced
1/4-1/2 red onion, finely diced
Combine in a bowl.
Pesto:
2 cups fresh basil
1/2 cup pine nuts
2 cloves garlic
1/2 cup olive oil
Combine the first three in a blender, add the oil with the motor running. Add more oil if needed, you want the pesto to be a little on the thin side.
Add the pesto to the quinoa salad and toss well to coat. Season with sea salt to taste.
